Project Tomato is an immersive local food experience in which students camp on farmland, spend time with farmers in their fields, and join the UO Urban Farm crew in the annual tomato harvest on campus, which they will cook into pizza sauce in the Carson Central Kitchen. The group will spend time examining urban farming as well as the surrounding rural areas and will travel by bike – the best way to get around town in Eugene!
Project Tomato has gained recognition as an effective exercise in farm to fork concepts. Students follow the tomato crop from the field, into the processing kitchen, and will enjoy their creation alongside their peers when the pizza is served weeks later. To celebrate food, farms, and the students’ pizza sauce creation, Dining Services hosts an annual local foods dinner and showcases the Willamette Valley’s incredible bounty.
